My first day of summer vacation! I get to relax and set my own pace every day. Today I made this breakfast plate. I started with a corn tortilla.
In my Pampered Chef air fryer, I air fried some tempeh separate from some small red and yellow baby peppers, and a little white onion using a little olive oil (I placed this on my clay tray). Once the peppers and onions were cooked, I cracked the egg over the top, broke the yoke and air fried. This all took about 10 minutes I scooped everything into the corn tortilla. Added some salt, peppers, paprika and southwestern seasoning
