Desserts

I contemplated whether I wanted to add desserts to my webpage.  What’s a food website without desserts!  I would be crazy not to.

They say you can eat whatever you want, as long as it’s in moderation.  One thing I’ve learned about moderation, is that it comes with willpower.  Not one of my best attributes (moderation or willpower) when it comes to dessert (a huge weakness).  I guess I will have to go to the gym more often, if I want to indulge as much as I do or just make the decision to no indulge as much.  I’m sure a lot of you feel the same way.  You have to train your brain to know when enough is enough.  (Let me know what you think)!

Coming out of cooking school as a pastry chef, was a huge life change for me.  I felt I had to taste everything I made.  If I hadn’t I wouldn’t know if it was good enough or not.  It’s one of those things.  One thing I was taught in cooking school was to taste the food I was serving.  If you didn’t and you served something that you didn’t season well, your grade went down.

I remember a time during the summer of my first job in high school.  I was working as a baker and making a lemon meringue pie.  Well, I pulled a white substance off the shelf, thinking it was sugar – it wasn’t, it was salt.  Someone had restocked the wrong ingredient in the sugar container.  If the owner hadn’t come over to taste the mixture before I poured it into the pan, I would have baked a salted curd into the pie – that wouldn’t have been pleasing at all to patrons!  I learned my lesson, and therefore taste everything I make.
