Cherry/peach galette

I went cherry picking for the first time ever! It was one of the hottest days, the pickings were slim, but I did it. What a rewarding experience.

I used a store bought plant based pastry dough – best thing I ever bought! After pitting the cherries (great therapy), I cut one peach – combined in a bowl with 13 ounces of cherries. Added swerve brown sugar, and crystal sugar, vanilla, cinnamon, and xanthin gum as binder. Rolled out dough round, place heaping amount of mixture in center, wrapped outside all around, pinching to seal.
