1 lb salmon cut into 4oz strips with skin
1 tsp sea salt
1/2 tsp black pepper
1 tsp olive oil
1 tsp ghee
Heat oil in non stick pan at high temp, reduce to medium high heat.
Place salmon skin side down, cook for 5 minutes. Turn over and cook 3 more minutes. Just at 2 minutes add ghee in between each slice and swirl pan. You can also use a spoon to gather liquid and pour over each piece. Just at 1 minute turn each piece on side; then at 30 seconds turn to other side. Remove from heat and let rest. I ate my salmon cold with the salad and guacamole recipe. It was delicious.
